Potato fritters

cook 8-10 medium potatoes,
1/4 large carrot in a pot until just cooked,
drain and leave to cool just enough to handle
grate into a bowl,
add 3/4 cup plain flour
1 tsp baking powder,
2 sprigs parsley, chopped
finely chopped spring onion or chives
salt and pepper to taste
milk substitute to mix

mix to a thick batter, and fry in a hot pan until golden on both sides
